概説ハーブの一種[葉、樹皮、実、花]苦辛い、冷却性のハーブ。

旬--
食用頭花はバターで炒める（エルダーフラワー・フリッター）。
花は煮た果物、ゼリー、ジャム（特にセイヨウスグリ）に加えてマスカットの香りをつける。
実はソースまた煮た果物、ゼリーの香味料と着色料に使用する（乾燥させた実は苦みが少ない）。
ジュースは砂糖と一緒に煮立て、ジンジャーとクローブで香りをつけてコーディアル（エルダーベリー・ロブ）を作る。		EdibleThe flowerheads are stir-fried with butter (elder flower fritter).
The flowers are used to add a flavor similar to muscat to cooked fruits, gelly, jam.
The fruits are used to flavor and dye sauces, cooked fruits, or gelly. Dried fruits are less bitter.
The juice is boiled with sugar, flavored with ginger and cloves, to make cordials.
